Avgolemono - Greek Soup

Ingredients:

  • 1 quart chicken broth
  • 3/4 cup rice, cooked
  • 2 egg yolks
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions:

  • Slowly heat the broth to a light boil.
  • Reduce heat to below a simmer and add the cooked rice.
  • In a bowl, lightly beat the yolks with the lemon juice.
  • Add one ounce of the warm broth to the egg mixture and mix well.
  • Remove the broth from the heat and slowly whisk in the egg mixture.
  • Warm over low heat for 20 minutes. Do not simmer.
  • Check the seasonings.
  • Serve immediately.

This Greek soup is light but flavorful.
