Avgolemono - Greek Soup

Ingredients:
- 1 quart chicken broth
- 3/4 cup rice, cooked
- 2 egg yolks
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions:
- Slowly heat the broth to a light boil.
- Reduce heat to below a simmer and add the cooked rice.
- In a bowl, lightly beat the yolks with the lemon juice.
- Add one ounce of the warm broth to the egg mixture and mix well.
- Remove the broth from the heat and slowly whisk in the egg mixture.
- Warm over low heat for 20 minutes. Do not simmer.
- Check the seasonings.
- Serve immediately.
This Greek soup is light but flavorful.
