Biryani Rice

Prep: 5 minutes, Cook: 30 minutes

Ingredients:

  • 2 tsp olive oil or clarified butter (Ghee is traditionally used)
  • 1 medium Onion, sliced
  • ¾ teaspoon Garlic, minced
  • ¾ teaspoon Ginger, fresh, peeled and minced
  • ¾ cup Rice
  • 2 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 Bay leaf
  • ⅛ tsp Saffron

Instructions:

  • Heat the oil or butter in a heavy saucepan over medium heat.
  • Add the onion and cook until soft.
  • Add the garlic and ginger and cook for 2 minutes.
  • Add the rice and cook for 2 minutes, stirring constantly.
  • Add the remaining ingredients. Bring to a boil.
  • Cover, reduce the heat and simmer 20 minutes. Serve warm.

An adaptation of the traditional dish, use this simplified version and simply add some cooked chicken, pork, beef or other game to create an entree, using different broth/stock where necessary.
