Andrews Mussels

Ingredients:

  • 1 pound fresh or thawed mussels
  • 4 oz. cream cheese
  • 1/8 cup finely cut green onions
  • 1/8 cup finely cut cilantro
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions:

  • Preheat oven to 375°.
  • Microwave cream cheese for 30-45 secounds in small bowl until mixable.
  • Mix in ingredients.
  • Arrange mussels onto foil wrapped baking sheet and spoon a quarter-sized gob per mussel
  • Bake for 15 minutes.
  • Let cool approx 5 minutes.
