Roasted Pork Loin With Creole Mustard Sauce

Ingredients:
- 2 pound pork loin roast, boneless
- Salt and pepper
- 1 cup light or heavy cream
- 2 tbsp Creole mustard (or any whole grain mustard)
Instructions:
- Season the pork with salt and pepper.
- Set the dampers on your grill to low.
- Place the pork on the grate and close the hood.
- Slowly cook the pork, turning several times until the roast reads 170 on an instant-read thermometer.
- Allow the roast to rest while you make the sauce.
- Reduce the cream by half in a small saucepan.
- Whisk in the mustard.
- Slice the pork thinly, about a ¼ inch thick. Spoon the warm sauce over the pork and serve warm.
This recipe was originally written to be roasted using a grill with a cover, but it can be done in the oven as well. For oven instructions, triple the amount of mustard and cream. Use ⅔ of the sauce to marinate the pork loin for at least 6 hours. Reserve a third of the sauce for spooning over the pork. Roast your pork loin at 350° for 40 minutes and check the temperature. Continue roasting until the temperature reads 170°.
