Grilled Chicken with Walnut Sauce

Ingredients:

  • 4 Chicken breasts (boneless, skinless), about 6 ounces each
  • 1 Tablespoon Butter
  • 1 small onion, minced
  • 1/2 teaspoon Garlic, minced
  • 1/2 cup Chicken broth
  • 1 1/2 teaspoons Parsley, chopped
  • 1/4 teaspoon Basil (dry)
  • 1/8 teaspoon Coriander (dry)
  • 1/2 cup Walnuts
  • Salt and pepper to taste

Instructions:

  • Place the walnuts in a food processor and run until ground. Set aside.
  • Melt the butter in a medium saucepan. Add the onion and garlic.
  • Cook until soft (Do Not Brown). Add the broth, herbs, and walnuts. Bring to a boil.
  • Reduce the heat and simmer until slightly thickened.
  • Grill the chicken while the sauce reduces.
  • Serve the chicken with the warm sauce ladled on top.
