Cajun Chicken Kabobs

Ingredients:
- 1 pound Chicken breast (boneless, skinless), cut into ¾ inch cubes
- 1 tbsp Butter, melted
- 2 tsp Cajun seasoning (blackened redfish seasoning)
- 1 Green bell pepper, cut into ¾ inch pieces
- 1 Onion, cut into ¾ inch pieces
- 1 Onion, cut into ¾ inch pieces
- Bamboo skewers
- Rice, cooked
Instructions:
- Soak the bamboo skewers in water for 30 minutes to prevent them from burning during cooking.
- Toss the chicken with the seasoning and butter. Alternate the chicken, onion, and pepper on the skewers.
- Place them on a slow-cooking part (and upper height) of the grill; or bake at 350° for about 20 minutes, turning once.
- Turn every few minutes to ensure even grilling on all sides. Serve over cooked rice.
