Pasta Salad With Smoked Oysters

Ingredients:

  • ½ pound Penne pasta
  • ¼ cup White wine vinegar
  • 3 tbsp Basil, fresh, chopped
  • 3 tbsp Parsley, chopped
  • Salt and pepper to taste
  • 2/3 cup Olive oil
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, seeded and diced
  • 3 Green onions, sliced
  • 2 cans Smoked oysters, drained

Instructions:

  • Add the pasta to two quarts of boiling water. Drain, rinse with cold water, and set aside.
  • Place the vinegar, basil, and parsley in the food processor bowl.
  • With the processor running, slowly drizzle in the oil.
  • Toss the dressing, pasta, and vegetables in a large bowl.
  • Allow to set at least one hour before serving.
