Chef Newmans Soon To Be Famous Meatloaf

Ingredients:
- 2 lbs. of ground beef
- 1 ½ cups of bread crumbs
- 2 tbsp of your favorite seasoning salt
- 1 12oz can of Mandarin orange segments
- 1 12oz can of Campbell's tomato bisque soup
- 8 oz. of sliced mushrooms
- 2 tsp of pepper
- 1 sweet onion (medium size), diced
- 2 tbsp butter or oil
- 2 eggs
- 1 tbsp sugar
- 1 tbsp of olive oil, or vegatable oil
Instructions:
- In a medium sized frying pan add the oil and let it get hot on medium to medium high heat.
- Add the sweet onion and sugar and saute the onions until they caramelize (golden brown), then remove from heat.
- Pre-heat your oven to 300°.
- Then in a medium mixing bowl add the can of tomato bisque soup, the juice from the mandarin oranges (save orange segments) and mix well.
- In a large mixing bowl, mix ground beef, caramelized onions, bread crumbs, seasoning salt, pepper, mushrooms, orange segments, and two thirds of the tomato bisque / mandarin juice mixture.
- Then mix it together well using your hands (be sure to wash your hands afterwards) and fold it in completely.
- Press mixture into a medium sized loaf pan, press down around all the edges to make a moat around the meatloaf, then pour the rest of the tomato bisque / mandarin juice mixture over the top of the meatloaf.
- Bake at 300° for 1 hour and 15 minutes. Note: if you use a glass loaf pan then only cook it for 1 hour.
- Let your meatloaf sit on a cooling rack for 15 minutes (in the pan) then slice in ½ to ¾ inch slices and serve!!
