Ingredients:
- 2 pounds Lamb, ground
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 2 tbsp Butter
- 2 tbsp Curry powder
- 2 ounces Almonds, slivered
- ½ cup Apricots, dried, chopped
- ¼ cup Chutney
- 3 slices Bread, white
- 1 ½ cup Milk
- 3 Eggs
Instructions:
- Melt the butter in a large heavy skillet. Add the onion and garlicand saute until just soft, about 2-3 minutes.
- Add the lamb and brown in the skillet. Add to a large mixing bowl.
- Toss in the curry, almonds, apricots, and chutney. Mix well.
- Soak the bread in the milk (reserve the milk) and then blend the bread into the mixture.
- Add 1 egg to the mixture and blend well.
- Place the mixture in a large, lightly oiled casserole dish.
- Beat the remaining 2 eggs with the reserved milk. Pour over the mixture.
- Bake at 350° about 45-60 minutes, or until the casserole is set and lightly browned.
- Serve warm.
