Grandmother's Oatmeal Cookies


This is the best Oatmeal Cookie I have ever tasted and is my family's favorite. This is a recipe that I have had for years that a friend of mine gave me.

Servings:

Makes 4 Dozen

Cooking Time:

Prep: 10 minutes, Bake: 10-12 minutes

Ingredients:

  • 3 eggs
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup shortening
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups quick cooking oats
  • ½ cup chopped walnuts

Instructions:

  • Beat eggs and combine with raisins and vanilla. Let soak for at least an hour.
  • Cream shortening (I use butter flavored shortening) and sugars together.
  • Sift dry ingredients into sugar mixture. Mix well.
  • Blend in remaining ingredients.
  • Shape into balls and place on ungreased cookie sheet.
  • Bake in 350 degrees F (175 degrees C) oven 10 -12 minutes. Do not overbake.
