Debi's Pineapple Cake


This recipe was given to me from a former co-worker whose wife made it for a holiday party we had at work. It's simple, easy to make and tastes great! Great to use in a jam when you have unexpected guests and need something simple to whip up.

About 12, use mix servings

Use mix instructions

Ingredients:

  • 1 box (18 1/4-ounce) of vanilla cake mix w/ pudding
  • 1 can of crushed pineapples
  • Sliced almonds
  • 1 can of sweetened condensed milk

Instructions:

  • Mix the cake mix according to directions, but using the pineapple juice from the can of pineapples in place of the water in the cake mix.
  • Add the can of crushed pineapples and mix again.
  • Pour into a greased sheet cake pan and bake according to the directions on the box for the mix
  • Remove from oven and poke holes all over the top using a small straw.
  • Spread the sliced almonds across the top.
  • Pour the can of condensed milk overtop of the cake.
  • Bake for an additional 5 minutes and then remove.
  • Allow it to cool and then refrigerate. Serve chilled.

You're probably thinking to yourself, "there's nothing to that!" I was amazed too when I found out how easy it was. Give it up to all the mom's out there who come up with ideas such as this!
