Coconut Cake

Ingredients:

  • Yellow Cake Mix
  • Can of Mixed Fruit (including syrup)
  • 2 ⅓ cup of coconut
  • 2 eggs
  • ½ cup margarine
  • ½ cup granulated sugar
  • ½ cup evaporated milk
  • ½ cup brown sugar

Instructions:

  • Mix yellow cake mix, can of fruit, 1 cup of coconut, and two eggs together.
  • Beat for 2 minutes.
  • Pour mixture into 9 inch pan.
  • Sprinkle ½ cup of brown sugar over top.
  • Bake for 45 minutes at 325°.

Icing:

  • Boil ½ cup margarine, ½ cup granulated sugar, and ½ cup evaporated milk - boil for two minutes.
  • Stir in 1 ⅓ cups coconut.
  • Spoon mixture over cake when it comes out of the oven.

Also known as "Ugly Duckling Cake".
