Coconut Cake

Ingredients:
- Yellow Cake Mix
- Can of Mixed Fruit (including syrup)
- 2 ⅓ cup of coconut
- 2 eggs
- ½ cup margarine
- ½ cup granulated sugar
- ½ cup evaporated milk
- ½ cup brown sugar
Instructions:
- Mix yellow cake mix, can of fruit, 1 cup of coconut, and two eggs together.
- Beat for 2 minutes.
- Pour mixture into 9 inch pan.
- Sprinkle ½ cup of brown sugar over top.
- Bake for 45 minutes at 325°.
Icing:
- Boil ½ cup margarine, ½ cup granulated sugar, and ½ cup evaporated milk - boil for two minutes.
- Stir in 1 ⅓ cups coconut.
- Spoon mixture over cake when it comes out of the oven.
Also known as "Ugly Duckling Cake".
