Orange Marmalade with Bourbon Glazed Ham

Cooking Time:
5 minutes per lb of ham, 20 minutes for glaze
Ingredients:
- 1 medium ham, butt or spiral-cut
- Whole cloves
- 1 cup water
- 1 cup cream sherry
- 1 tbsp grated fresh ginger
- ½ cup orange marmalade
- ½ cup bourbon
- 2 tbsp prepared mustard
- ¼ cup brown sugar, firmly packed
Instructions:
- Preheat oven to 425° F. Line roasting pan with foil.
- Trim rind and fat from ham, leaving ¼ inch layer of fat.
- Score ham in a diamond pattern and stick cloves into center of each diamond. Place ham in pan.
- Combine water, sherry, and ginger in a small bowl. Pour sauce over ham.
- Bake 5 minutes per pound.
- Cook marmalade, bourbon, and mustard over medium heat in a small saucepan until warm, stirring occasionally, about 5 minutes (¾ glaze will be thin).
- Increase oven to 450° F.
- Brush glaze over ham and sprinkle with brown sugar.
- Bake until deep brown about 20 minutes.
Coca Cola® Ham Glaze

Cooking Time:
80 minutes on ham
Ingredients:
- 12 oz. can of Coca-Cola®
- brown sugar, liberal amounts
- cloves (optional)
- ginger (optional)
Instructions:
- Score the top of a ham and place in a 325° oven until ham is hot.
- Remove from oven and cut skin off ham.
- Pack outside of ham with brown sugar about a ¼-inch thick.
- Pour 12-ounces of soda in bottom of pan. Do not pour over ham.
- Place ham in oven and let top of ham cook dry for about 20 minutes.
- Remove and baste.
- Continue cooking ham uncovered for one hour, basting every 10 minutes.
Pineapple Ham Glaze

1 5 lb. ham
Cooking Time:
60 minutes
Ingredients:
- 1 small can of crushed pineapple
- 1 can of sliced pineapple
- 1/3 cup brown sugar
- 1 tbsp vinegar
- 3 tbsp prepared mustard
- 1 small jar of maraschino cherries (optional)
Instructions:
- Whisk together everything but the sliced pineapples in a bowl, mix well.
- In the last hour of cooking, pull out the ham and glaze the ham with the mixture using a brush.
- Layer the pineapple slices across the top. Use wet toothpicks to stick them in. If using the cherries, do the same with these in the middle of the pineapple.
- Baste every 10 minutes. If needed, you can add a little water to the bottom of the pan if getting dry.
