Philly Tailgaters Cookbook

Being an avid fan of the Philadelphia Phillies, I follow a number of other Phillies fans on Twitter and I came across a particular tweet from a blogger who runs Phillies Nation putting together a cookbook for tailgating at baseball games. That’s right up my alley and I know I have some killer grilling recipes that are sure to be a hit with tailgaters everywhere. With spring training in full swing and baseball season fast approaching, this cookbook will be in the hands of tailgaters everywhere in the Philadelphia area and possibly beyond. What a great way to get some free publicity.

I submitted my Steak and Shrimp Kabobs recipe for inclusion into the cookbook. The way it works is the cookbook authors are going to try out each and every recipe submission and decide whether or not it’s worthy. I have a feeling they’ll be pleasantly surprised with this one. If not, I have a few more I might submit as well. Once I hear back, I’ll post an update here on the blog and pass along any information I find out about when it will be published.

Irish Potatoes and Things For Saint Patrick's Day

Ah, the luck of the Irish. Saint Patrick’s Day is coming up soon and I’ll be cooking up some family favorites around the holiday as well as enjoying good company and drink with some friends of course.

One of the most popular recipes at home and on Professional Recipes is the Irish Potatoes Recipe. It’s simple and easy to make and a old recipe passed down to me from a grandmother. They usually don’t last very long though so we often make a many batches of this. Simply double or triple the recipe if you need to make more, just be careful to mix it really well. Here’s the recipe below:

Irish Potatoes

Servings:
6-10

Cooking Time:
10 minutes

Ingredients:

  • 8oz. cream cheese, soft
  • 16 oz. coconut, shredded
  • 2 lbs. confectioner’s sugar
  • 3 tbs. vanilla extract
  • Ground cinnamon for topping and garnish or melted chocolate

Instructions:

  • Mix together all of the ingredients, except the cinnamon, thoroughly.
  • Roll into 1 to 1 & ½ inch balls.
  • Roll in ground cinnamon, or melted chocolate according to taste!

Here’s another idea for something to make, try Irish Soda Bread. It’s a little more involved of course, but is a classic and often served in restaurants specializing in Irish fare. The Shanachie Irish Pub and Bar comes to mind. They serve this as their bread served to every table and it’s really good.

I’ve also made Traditional Corned Beef and Cabbage and changed it up with using Ham instead of corned beef. The kids especially enjoy the ham over the corned beef, so I often make both around this time of year and I make enough to have for 2 nights each, so our fridge is a little full for a few days!

The latest Featured Recipe on Professional Recipes is the Firewalker T-Bone Steak. A recipe I dug up just recently in one of my cookbooks that is wonderful to prepare for a backyard barbeque. Throw a few of these on the grill with your favorite sides dish recipes or some Poultry and Pork Recipes for some variety and your BBQ will be a summer hit.

Pineapple Stuffing is More Popular Than I Realized

Although I knew it was a common and popular recipe in some parts, I was surprised to hear how many people didn’t know how to make Pineapple Stuffing and were looking for the recipe. It is easy to make and tastes amazing, especially with ham glazed with some kind of pineapple glaze or sauce.

We cooked (my wife and I together) an Easter ham dinner for 15 people on Sunday and of course, we made my wife’s pineapple stuffing. The recipe is her recipe but it is the same as a few popular ones I’ve seen, so it’s been passed around quite a bit.

We make it using potato bread but the original calls for white bread, but really it is a personal preference. Potato Bread soaks up the pineapple very nicely and gives it a little extra texture, though it is filling!

The recipe calls for a 9-inch pan to be used and I recommend sticking to it if possible. If you do decide to use a bigger pan, take care not to fill the pan too high as it will not only take longer, but you risk the outside browning nicely while the inside is still very wet and undercooked. If this does happen to you, simply remove the top quarter or more and transfer it to another pan.

Pineapple Stuffing Recipe

Of course, to go with the Pineapple Stuffing and the ham, I made a Caramel Pineapple Glaze (my own title of course) to glaze the ham and make a sauce for the guests to drizzle over their plates, garnished with, of course, pineapple slices in the sauce bowl (for anyone who loves to munch on pineapple with ham – like me!).

Take care when trying the Caramel Pineapple Glaze recipe though as making the caramel can be tricky if you don’t get the timing quite right. You can grab this recipe by going here:

Hi everyone,

With the Easter holiday coming so early this year, we had to get out some Easter Recipes, especially Easter Ham Glaze and a few others coming in the next few days. I’d also like to discuss glazing hams before the holiday officially arrives, which is a popular tradition in many households who celebrate Easter. Usually the ham is cooked to whatever family tradition passed down to the chef du jour, and is one that has been used for a long time.

While I don’t propose breaking family tradition of course, it’d be very easy to change up your style instead and throw some pizazz into that family tradition. How do you ask? Simple, we’ll show you some tried and true methods for your old favorites and some new ideas for those of you bold enough to change it up!
